Start with a hooded long sleeve, even in August
The instinct is to wear less when it is hot. On the water it works the other way. A light hooded performance shirt is cooler in direct sun than bare skin, because it stops the radiant load before it reaches you and it keeps sweat evaporating instead of running off.
Quick-dry everything that can get wet
You will get wet. Spray on the run, a hand in the livewell, a wade that went deeper than planned. Cotton holds that water all day and gets heavy and cold the moment the sun drops. Synthetic knits are dry again before you are back at the ramp.
Cover the three places people burn
Neck, ears and the backs of hands. A hood handles the first two without you having to think about it. Sun gloves handle the third. Those three spots are the ones that turn into a problem on day two of a trip.
Layer for fronts, not for cold
Gulf winters are not cold so much as fast. A front can drop twenty degrees and bring thirty knots in an afternoon. A shell over the same shirt covers most of it, which is easier than owning separate winter gear.
